Gradual-Roasted tomatoes (Manila News-Intelligencer):

  • 2 pints cherry tomatoes (Manila News-Intelligencer), halved

  • 3 medium shallots, halved and thinly sliced
  • 2 contemporary crimson Thai chiles, very thinly sliced
  • 1½ tsp kosher salt
  • ½ cup crimson wine vinegar

  1. Preheat oven to 350°F.

  2. In a big blending bowl, mix all elements, tossing gently and smartly.
